Here’s the recipe for my Gluten & Dairy Free Avocado Brownies. If you’d like the regular version, then use all-purpose flour and semi-sweet chocolate chips. This recipe was adapted from Fake Ginger’s Blog.

Ingredients
- 2 Ripe Avocados Mashed
- 4 eggs
- 1 1/2 cups Chocolate Dream Non-Dairy Chocolate Morsels
- 1/4 cup Cocoa Powder
- 1/2 cup Bob's Red Mills All Purpose Flour
- 1 cup Sugar
- 2 tsp. Vanilla (I use Madagascar Vanilla)
- 1/2 tsp. Salt (I use Himalayan Salt)

Instructions
- Preheat oven to 350 degrees. Spray your 8x8 pan with avocado oil (can be purchased at Whole Foods Market). You can also use olive oil spray.
- In a small bowl, melt the non-dairy chocolate chips in the microwave for 30 seconds. Remove and stir. Continue to return the bowl back into the microwave for 30 seconds, removing and stirring until the chips are melted and the mixture is smooth. Set aside to let cool.
- In a separate bowl, beat the mashed avocado and sugar together until creamy with your mixer. Add in the cooled chocolate, then the eggs one by one, and the vanilla. Mix together until well blended.
- In a separate bowl mix together the dry ingredients, flattening out any clumps of flour until well mixed.
- Slowly add this mixture to the chocolate/avocado bow and mix until all ingredients are combined.
- Pour into your 8x8 baking dish and bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Cool the brownies completely, cut, and enjoy!
